We can certainly recommend www.eurotunnel.com as a relaxed way of crossing the channel. It is not expensive if you choose your time and book ahead.
The French Autoroutes are superb, we are 30 minutes from the A61. Allow about 12 hours minimum for you trip down. We would suggest that you have a nights stopover on the way. Whichever way you come avoid Paris at all costs.

SNCF the French railways run a direct TGV from Lille and Paris to Narbonne.
Eurostar will take you to Lille. You will need to hire a car in Narbonne. We are 1 hour’s drive from Narbonne.
